Joining our second installment of Summer Refashioned is Toronto bartender extraordinaire Brendan Schätti. Having competed in the El Rey del Daiquiri competiton in Cuba, he is no stranger to this delicious tipple. Brendan has fashioned an easy sipping drink that combines multiple flavor profiles; hitting savory, herbal, sweet, dry and refreshing. Made for a late summer patio, here is the Zipi y Zape, his humble take on the classic we all love.
Zipi y Zape
50 ml The 86 Co Caña Brava Rum
20 ml Manzanilla Sherry
20 ml Raw Cane Syrup (1:1 ratio)
3 leaves Flat leaf Parsley
1 pinch ground Cayenne
1 small pinch Salt
30 ml Lime juice
Combine all ingredients, shake over ice. Fine strain into chilled coupe
