Aroma: Intense, floral, maraschino like qualities. Mineral, with a slight bit of smokiness and herbaciousness to compliment the red bush fruit
Palate: Powerful campfire smoke, full texture, creamy and viscous. More ripe berry fruit but also hints of grilled banana and plantain
Finish: Subtle, elegant and balanced. Long enough to stand strongly alone, versatile enough to clearly be playful with other elements

(Agave Angustifolia Haw) This Doba-yej is the only part of the Los Siete Misterios lineup to undergo copper pot distillation. In addition, unlike the other mezcals, this is made in the region of Matatlán. However all other distilling techniques have remained the same. The agaves were cooked in earth oven pits, using nearby deadwood and river stones. They were hand smashed in Sabino wood canoes. Fermentation occurs naturally using wild yeasts. Doba-yej is the ancient Zapotec word for Espadin.
