The Arroqueño agave used for this spirit is harvested wild, after usually 15 years and plus of maturation. Utilizing traditional methods, Koch el Mezcal roasts the selected piñas in an earthen pit using red oak and mesquite to keep the fire stoked. This mezcal is distilled using a copper pot still.
